One way to get to know a city is to look at how the products that carry its name enter the records. In recent years two products from Bilecik have joined that list through an official registration. One belongs to the table and the other to the loom. This article covers the registration details of Bilecik Quail Kebab and Lefke Cloth, the cuisine of the province, and how registered products can be read when you travel in Bilecik. I report only what is written in official records and institutional pages. Details that are not in the records, such as the weave measurements or pattern of Lefke Cloth, I deliberately leave out.
What a geographical indication means
In general terms, a geographical indication is a form of protection that records the link between a product and a region, and the quality or reputation that comes from that region. In Türkiye the records are published on the Geographical Indications Portal of the Turkish Patent and Trademark Office. On the portal each record clearly shows the type of indication, file number, application and registration dates, product group, province and the applicant. Both new Bilecik records appear as indications of source. This is a reminder that a registration is more than protection of a name. It is a register entry that also shows in which province the product is recorded. So if you see a geographical indication note next to a product name, you can find the record on the portal and check its date and applicant.
The first registration, Lefke Cloth
According to the portal record, Lefke Cloth is registered with an indication of source. The application file number is C2023/000330, and the application was made on 5 December 2023. The registration number is 1659 and the registration date is 7 November 2024. The product group is woven goods and the province is listed as Bilecik. The applicant and registrant is the Osmaneli Municipality. The history section of the Culture Portal states that an ancient town called Leukai, also known as Lefke, was founded in the centre of what is now the Osmaneli district. Because the sources do not explain how the name relates to the ancient one, I do not draw a link. The weave dimensions, thread and pattern may appear in the TÜRKPATENT bulletin, but they could not be read from these pages, so I do not write them here. A reader who wants the details can consult the register document on the portal.
The second registration, Bilecik Quail Kebab
Bilecik Quail Kebab is also registered as an indication of source. Its file number is C2024/000118 and the application was made on 25 March 2024. The registration number is 1690 and the registration date is 21 January 2025. The product group is recorded as dishes and soups. The applicant is the Bilecik Chamber of Commerce and Industry. So the two applications were led by two different institutions, one a local government and the other a professional chamber. This difference shows that local institutions and producers worked together in the registration process. The details of the process and the definition of the product are in the portal document, and no recipe or standard definition is written in this article.
What the register record says and does not say
Placing the two records side by side makes it clearer what the portal tells us. Both show the word registered in the status field, and both list Bilecik as the province. The time between application and registration was roughly ten to eleven months in both cases. The gap between 5 December 2023 and 7 November 2024 for Lefke Cloth, and between 25 March 2024 and 21 January 2025 for Quail Kebab, shows this. Each record page also has a section titled geographical indication register document. The portal's explanation in that section says the list was sent to TÜRKPATENT by those who registered the product. The list has columns for the name or title of the organisation and its type of activity. For this reason the portal does not describe the product's taste or texture. It shows who is registered and at what stage the record stands. This is why I base the detail in this article on the record and not on the product itself.
The process as told by the development agency
According to the 28 February 2025 announcement of the Bursa Eskişehir Bilecik Development Agency, these two registrations brought the number of products with a geographical indication in Bilecik to 9. The announcement says the work began in early 2024 under the coordination of the Bilecik Governorate and the agency. The Chamber of Commerce and Industry hosted it, academics of the local university contributed, and a detailed study was carried out together with local producers. In this framework applications were made for 25 new products in total, and Bilecik became the province with the second highest number of geographical indication applications to TÜRKPATENT in 2024. According to the announcement the Quail Kebab was the first fruit of this process, while Lefke Cloth was the result of an application the Osmaneli Municipality had made earlier. Of the 24 products still under evaluation, 6 had reached the announcement stage. If all applications succeed, the province is expected to reach 33 registered products. These figures are an expectation, not a settled fact.
Registrations still in progress
The same announcement also mentions the Pazaryeri district. It says that potters there applied for a geographical indication and that Pazaryeri Boza, whose registration process is continuing, was among these efforts. This product is not yet registered. For that reason I mention it only as a process. It should be remembered that applications and products at the announcement stage will change over time. For the current situation, the database on the TÜRKPATENT portal or announcements of local institutions are the most reliable sources. If you want to learn while travelling whether a product is registered, asking the seller for its registration number and checking it on the portal is a dependable way.
The cuisine of Bilecik
According to the food page of the Bilecik Provincial Directorate of Culture and Tourism, traditional ways of eating remain active in the province. Cereals come first in the diet, and most of the dishes specific to the province are made from dough. On the page, pide, bükme and hodalak are listed as kinds of bread baked in an oven. A bread called kömme, made by burying dough in the sparkling, ashy embers of a freshly extinguished hearth, is also mentioned. It is noted that local people also prepare pasta, tarhana, couscous and noodles themselves. The source says urban eating habits are widening their reach, but that traditional patterns and authentic dishes keep their weight. Names such as büzme, chickpea manti with chicken, keşkek, ovmaç soup, lentil manti, cut dough, thin pastry baked on a griddle, water börek, partridge kebab, dried beans, couscous pilaf, griddle kebab, foam halva, hoşmerim and grape molasses are listed among the main local dishes.
Four dishes with recipes on the page
The directorate page also publishes recipes for four dishes. The sour cut-noodle soup with mountain plums is made with green lentils, home-made pasta and meat broth, and finished with a mint and butter sauce. Its sourness comes from boiling dried mountain plums and dried cornelian cherries. The chickpea manti are baked in the oven with crushed chickpeas inside small squares of dough, returned to the oven with chicken broth and served with garlic yoghurt. The büzme dessert is prepared by wrapping walnut-filled thin dough around a rolling pin and scrunching it, then sweetening it with syrup. The quail kebab recipe says the quails are plucked and smoked, prepared on a tray with potatoes, tomatoes and peppers, and served on a copper plate. I do not write these recipes with their measures, because the recipe is the source's own text. I also do not know whether the directorate's recipe is exactly the same as the standard of the product registered at TÜRKPATENT.
The shared logic of the recipes
Reading the four recipes together reveals common features of the local kitchen. First, butter plays a visible role in all four. It appears in the sauce poured over the soup, in the pot where the quail is cooked, in the hot fat poured over the manti and in the melted fat poured onto the tray of the büzme dessert. Second, dough is at the centre of the recipe, which agrees with the directorate's own observation. The pasta in the soup, the dough of the manti and the dough rolled out and scrunched on the pin for büzme are examples. Third, the balance of sour and sweet is deliberate. The soup receives a sour liquid made from dried mountain plums and cornelian cherries. The manti are accompanied by garlic yoghurt. The büzme receives syrup and is topped with roasted sesame and coconut. Fourth, presentation is taken seriously. The quail kebab is served on a copper plate, and the manti are decorated with parsley leaves and served hot. These observations come only from the recipe texts on the page and are not enough to generalise about the whole cuisine of the province.
Practical advice for travellers
When you look at a local product in Bilecik, check its name first and then its record. If a registered product is being discussed, you can verify its registration number and date on the portal. The number is 1690 for Quail Kebab and 1659 for Lefke Cloth. At places that serve food it may be hard to know which dish is the same as the registered product, so asking the people who serve it about the registration record is a reasonable approach. The same approach applies to woven goods. If you are going to Osmaneli, you need to ask the municipality or the provincial directorate of culture and tourism where and how Lefke Cloth can be seen, because this information is not in the sources. Opening hours and prices can change, so check current information with the relevant institution. This article is not a tasting or shopping list. It only summarises what the official records say about Bilecik.
